1. Crispy BBQ prime rib
It is a classic of summer grilling on the grill. It is only eaten on special occasions, mainly because of its high price (40 euros per kg on average for quality meat).

Prime Rib deserves to be taken seriously. If you can afford it, opt for Aubrac or Galician beef, which comes from northern Spain. If you like the strong taste of meat, choose aged meat. Then, once you’ve got your hands on the right grill, here are the steps you need to follow.

Take the prime rib out of the cold two hours before cooking. If it’s too cold, it suffers a thermal shock that contracts the flesh.
Heat the grill by lowering it as close to the embers as possible and allow the temperature to rise.
Meanwhile rub the meat with some fat. And once the grill (or plancha) is very hot, place the piece of meat on it.
All these preparations aim to provoke the Mailard reaction. This creates a crust on the sides of the meat, making it crispy on the outside and tender on the inside.
Cook for about 4 minutes on each side without piercing the meat.
At the end of cooking, allow 5 minutes on each side for a 2-pound piece of meat (by raising the grill slightly), 7 minutes for raw meat on the grill, and 10 minutes for medium-sized meat. Finally, some people like to let the meat rest in aluminum foil for another 5-6 minutes so that the juice spreads all over the surface. Then season with coarse salt and enjoy.

Summer offers a wide variety of vegetables, the taste of which is already very genuine, simply grilled on the grill with a drizzle of olive oil. But you can also add a marinade. To do this, simply crush some garlic and mix it with an equal amount of olive oil and lemon juice. Add some chopped basil.
Pour some of the marinade over the sliced zucchini, peppers and eggplant. Cover and let rest in the fridge for about an hour.
Then, when the grill is hot, grill for about two minutes on each side, depending on the thickness of the slices. Baste regularly with the remaining marinade.
Serve hot with grilled meat or whatever. This recipe can also be presented in the form of colorful and equally appetizing vegetable skewers.
3. Special Barbecue Summer Fruit Skewers
Again, summer fruits are endless fun. Fresh, naturally sweet and watery, they’re a natural treat, but nothing stops you from being a little more sophisticated. Fruits can also be turned into a delicacy by enhancing their flavor with a marinade after grilling and, above all, flavoring them.
To make your recipe a success, use honey, some rum, brown sugar, melted butter, and a touch of cardamom for those who like it. Pineapple, banana, peach, apricot, or strawberries are ideal. Thread them onto skewers and brush them with the marinade before lightly grilling. A scoop of ice cream goes perfectly with this dessert.
